  • 6 - boneless chicken thighs
  • 4 - Italian sausage
  • 1 - small white onion(s)
  • 2 - whole carrots
  • 1 - 28 oz. can(s) whole tomatoes
  • 2 - 15 oz. can(s) Cannellini beans
  • 1 - Tbsp dried parsley
  • 1 - tsp dried thyme
  • 1 - cup(s) chicken broth
  • - Salt and pepper
  • Garnish: - shredded Parmesan cheese**
  • Side: - salad**
  • Side: - dinner rolls**

Cooking Directions for Single Meal

  1. Open the whole, peeled tomatoes. Open, drain and rinse the cans of cannellini beans.
  2. Chop the small white onion and peel and slice the carrots into 1/4-inch pieces.
  3. Slice the sausage links, and trim the chicken thighs if needed.
  4. Add all of the ingredients to the slow cooker insert. Set on low and cook for 8 hours.
  5. Season with salt and pepper to taste.
  6. Prepare the salad.
  7. Warm the dinner rolls.
  8. Serve Slow Cooker Chicken Cassoulet with side salad and dinner rolls.

  1. Chop 2 small white onions.
  2. Peel and slice 4 whole carrots into 1/4-inch pieces.
  3. Open 2 cans of whole, peeled tomatoes.
  4. Open, drain and rinse 4 cans of white beans.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 6 boneless, skinless chicken thighs
  • 4 Italian sausage links
  • Half of the chopped onions
  • Half of the carrot slices
  • 1 - 28 oz. can whole, peeled tomatoes
  • 2 - 15 oz. cans cannellini beans
  • 1 Tbsp dried parsley
  • 1 tsp dried thyme
  • 1 cup chicken broth
  • Salt and pepper

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring all of the contents of the baggie into slow cooker, and cooking on low for 8 hours.

Dairy-Free Modifications

Recipe is dairy-free when the shredded Parmesan cheese garnish is omitted.

Gluten-Free Modifications

Recipe is gluten-free when served with gluten-free sides like rice or quinoa.
