- 1 - 15 oz can(s) chickpeas
- 3 - medium sweet potatoes
- 4 - whole carrots
- 1 - 15 oz. can(s) sweet peas
- 2 - cup(s) vegetable broth
- 1 - Tbsp curry powder
- 1 - tsp garlic powder
- 1 - tsp ground ginger
- - Salt and pepper
- Garnish: - bunch cilantro**
- Side: - veggies**
- 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal
- Add all the ingredients except the garnish and sides to the slow cooker and add 2 cups of water. Set the slow cooker on low and cook for 8 hours.

- Peel and dice 6 sweet potatoes.
- Peel and slice 8 whole carrots.
- Open and drain 2 cans of chickpeas. Open and drain 2 cans of sweet peas.
To each gallon-size plastic freezer baggie, add the following ingredients:
- Half of the cans of chickpeas
- Half of the diced sweet potatoes
- Half of the sliced carrots
- Half of the cans of peas
- 2 cups vegetable broth
- 1 Tbsp curry powder
- 1 tsp ground ginger
- 1 tsp garlic powder
- Salt and pepper to taste
Remove as much as air as possible and seal.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.
Special notes
You could use chicken broth in place of the vegetable broth, if preferred.
