Ingredients for Single Meal

  • 1 - 15 oz can(s) chickpeas
  • 3 - medium sweet potatoes
  • 4 - whole carrots
  • 1 - 15 oz. can(s) sweet peas
  • 2 - cup(s) vegetable broth
  • 1 - Tbsp curry powder
  • 1 - tsp garlic powder
  • 1 - tsp ground ginger
  • - Salt and pepper
  • Garnish: - bunch cilantro**
  • Side: - veggies**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Add all the ingredients except the garnish and sides to the slow cooker and add 2 cups of water. Set the slow cooker on low and cook for 8 hours.
  2. Prepare veggies.
  3. Serve Slow Cooker Curried Chickpeas & Vegetables with a side of fresh veggies.

Freezeasy Meal Prep Directions

  1. Peel and dice 6 sweet potatoes.
  2. Peel and slice 8 whole carrots.
  3. Open and drain 4 cans of chickpeas. Open and drain 2 cans of sweet peas.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the cans of chickpeas
  • Half of the diced sweet potatoes
  • Half of the sliced carrots
  • Half of the cans of peas
  • 2 cups vegetable broth
  • 1 Tbsp curry powder
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • Salt and pepper to taste

Remove as much as air as possible and seal.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.

Special notes

You could use chicken broth in place of the vegetable broth, if preferred.
