Slow Cooker French Onion Beef Cubes

It’s like a Beefy French Onion Soup but without a bowl! I highly recommend spooning this beef and sauce over a thick slice of loaf bread and topping with shredded mozzarella, swiss or gruyere cheese. Enjoy!

Ingredients for Single Meal

  • 2 - lb(s) stew beef
  • - Salt and pepper
  • 1 - large white onion(s)
  • 8 - oz. baby bella mushrooms
  • 1 - cup(s) beef stock
  • 1 - 10 oz can(s) french onion soup
  • 4 - slices French loaf bread
  • 2 - cup(s) shredded mozzarella cheese**

Cooking Directions for Single Meal

  1. Slice the onions into half-moon shaped pieces.
  2. Lightly chop the baby bella mushroom slices.
  3. Place the stew beef cubes into the base of the slow cooker and season with salt and pepper. Sprinkle the onion slices and mushroom slices over the top. Pour in the beef stock and French onion soup.
  4. Set the slow cooker on low and cook for 8 hours. Once finished cooking, spoon the beef, onions and mushrooms over a large slice of bread. Top with shredded mozzarella cheese and let it melt.
  5. Prepare salad.
  6. Serve Slow Cooker French Onion Beef Cubes over bread, topped with shredded cheese and a side salad.

Freezeasy Meal Prep Directions

  1. Slice 2 large white onions into half-moon shaped pieces.
  2. Lightly chop 16 oz. baby bella mushroom slices.
  3. Open 2 cans of French onion soup.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 2 lbs. stew beef cubes
  • Salt and pepper
  • Half of the onion slices
  • Half of the mushroom slices
  • 1 cup beef stock
  • 1- 10 oz. can French onion soup
  • Do not add the bread or shredded cheese to the freezer bag.

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours. Serve as directed.
