Ingredients for Single Meal

  • 4 - boneless pork chops
  • - Salt and pepper
  • 1 - red bell pepper(s)
  • 1/2 - small white onion(s)
  • 2 - Tbsp brown sugar
  • 1 - Tbsp Jerk or Caribbean spice
  • 1 - 20 oz. can(s) pineapple chunks
  • Side: - dinner rolls or rice**
  • Side: - veggies**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. To the slow cooker, add the pork chops and sprinkle with salt and pepper.
  2. In a small mixing bowl, toss together the chopped bell pepper, chopped onion, brown sugar and Jerk or Caribbean spice seasoning. Stir in the pineapple chunks and juices from the can. Pour over the pork chops in the slow cooker.
  3. Set slow cooker on low and cook for 8 hours.
  4. Serve Slow Cooker Islander Pork Chops with side dishes.

Freezeasy Meal Prep Directions

  1. Chop 1 white onion.
  2. Seed and dice 2 red bell peppers.
  3. Open 2 cans of pineapple chunks.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 4 boneless pork chops
  • Salt and pepper
  • Half of the diced bell pepper
  • Half of the chopped onion
  • 2 Tbsp brown sugar
  • 1 Tbsp Jerk or Caribbean spice seasoning
  • 20 oz. can pineapple chunks, undrained

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.
