Slow Cooker Italian Tortellini

Pasta and cheese might just be the most perfect food combination in the history of food. Those Italians sure got that right! This is a ground sausage (or you could use ground beef) based sauce that’s good with tortellini in the slow cooker for just 1 hour, then the cheeses are added to finish off the meal. Enjoy!
Ingredients for Single Meal
- 1 - lb(s) ground Italian sausage
- - Salt and pepper
- 20 - oz. fresh or frozen tortellini
- 1 - 26 oz. jar(s) marinara sauce
- 1 - cup(s) beef stock
- 1 - Tbsp Italian seasoning
- 1 - cup(s) grated Parmesan cheese**
- 1 - cup(s) shredded mozzarella cheese**
- Side: - salad**

Cooking Directions for Single Meal
- In a skillet, brown the ground Italian sausage then drain.
- Place the browned Italian sausage into the base of the slow cooker and add the tortellini (fresh or frozen), marinara, beef stock, salt, pepper, and Italian seasoning. Gently stir through.
- Set the slow cooker on low and cook for 1 hour. At the end of the cooking cycle, stir the grated Parmesan cheese into the sauce, and then top with shredded mozzarella cheese.
- Prepare salad.

- In a large skillet, brown 2 lbs. ground Italian sausage, then drain.
To each gallon-size plastic freezer baggie, add the following ingredients:
- Half of the browned sausage
- 1 - 20 oz. box fresh or frozen tortellini
- 1 - 26 oz. jar marinara sauce
- 1 cup beef stock
- 1 Tbsp Italian seasoning
- Salt and pepper
- Do not add the cheeses to the freezer baggie.
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 1 hour. Add cheese, as directed, before serving.
Dairy-Free Modifications
Recipe is dairy-free when you omit the Parmesan and mozzarella cheeses.
Gluten-Free Modifications
Unfortunately, there is not a great gluten-free option for this meal.
