Slow Cooker Lemon & Dill Salmon

Simple recipe for salmon in the slow cooker. Be sure to note the cook time on this one. It is less than the typical slow cooker meal!

  • 1 - lb(s) salmon fillet

  • 2 - tsp fresh dill

Cooking Directions for Single Meal

  1. Place a large piece of parchment paper into the base of the slow cooker. The parchment paper is to make it easier to lift the salmon out of the slow cooker after it cooks.
  2. Place the 4 salmon fillets flat on the parchment paper, skin side down. Sprinkle each with little salt and pepper over the top. Drizzle lemon juice over the salmon pieces. Place fresh chopped dill sprigs on salmon.
  3. Set on high and cook for 1 hour.
  4. Cook rice as directed on package.
  5. Prepare veggies, as needed.
  6. Once salmon is cooked, carefully lift it out of the slow cooker onto a shallow serving dish. Remove skin and serve.
  7. Serve Lemon & Dill Salmon with rice and veggies.

Freezeasy Meal Prep Directions

  1. Cut 2 lbs. salmon into 8 - 1/4 lb. fillets.
  2. Finely chop 4 tsp fresh dill.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the salmon fillets
  • Salt and pepper
  • 2 tsp lemon juice
  • Half of the chopped dill

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker lined with parchment paper, and cooking on high for 1 hour.
