  • 4 - small boneless chicken breasts
  • 2 - cup(s) sweet BBQ sauce**
  • 1 - 15 oz can(s) fire diced tom
  • 1/2 - cup(s) bacon bits
  • Side: - dinner rolls**
  • Side: - veggies**
  • garnish - green onion(s)**
  • 1 - cup(s) shredded sharp cheddar cheese**

Cooking Directions for Single Meal

  1. Place the chicken breasts in the base of the slow cooker.
  2. Sprinkle the BBQ sauce and fire roasted diced tomatoes over the top. Finally, sprinkle the bacon bits over the top.
  3. Set on low and cook for 8 hours.
  4. Once cooked, slice or shred the chicken into the sauce. Garnish with sliced green onions and shredded sharp cheddar cheese.
  5. Warm the dinner rolls and cookthe veggies, as directed.
  6. Serve Slow Cooker Monterrey Chicken with side of dinner rolls and veggies.

Freezeasy Meal Prep Directions

  1. Open 2 cans of fire roasted diced tomatoes.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 4 boneless chicken breasts
  • Half of the canned fire roasted diced tomatoes, into each baggie
  • 1/2 cup bacon bits

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours. Slice or shred the chicken before garnishing and serving.
