Cooking Directions for Single Meal

  1. Place the roast in the base of the slow cooker and season with minced onion, salt and pepper. Add about 1/2 cup of water around the roast to keep the inside of the slow cooker humid and moist.
  2. In a small bowl, whisk together the peach preserves and ginger. Spread directly over top of the pork roast. Set the slow cooker on low and cook for 8 hours. Once cooked, slice the pork.
  3. Cook rice, as directed.
  4. Prepare veggies.
  5. Serve Slow Cooker Peach Glazed Pork Roast with rice and veggies.

Freezeasy Meal Prep Directions

  1. Whisk together about 1 cup peach preserves and 2 tsp ginger.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 2 lb. pork roast
  • 1 tsp minced onion
  • Salt and pepper
  • Half of the prepared peach-ginger glaze

Remove as much as air as possible and seal.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.

Special notes

If your slow cooker runs hot, you might need to add 1 - 1 1/2 cups of water to keep the pork roast from drying out.
