Made in the slow cooker, with sweet potatoes and carrots… this a perfect one dish dinner. The boys love carrots and sweet potatoes, and this is pretty much an ‘everyone will clear their plates’ kinda meal. Winner, winner…pork roast for dinner!

- 4 - medium sweet potatoes
- 1 - lb(s) baby carrots
- 1 - cup(s) raspberry chipotle sauce

Cooking Directions for Single Meal
- Peel and dice the sweet potatoes.
- Add the pork roast to the base of the slow cooker and sprinkle with salt and pepper. Spread the diced sweet potatoes and baby carrots around and on top of the pork roast. Pour the Raspberry Chipotle sauce over the top of the meat and veggies.
- Set slow cooker on low and cook for 8 hours.

- Peel and diced 8 medium sweet potatoes. Place them in large bowl with water and soak them until you’re ready to prepare the meals.
To each gallon-size plastic freezer baggie, add the following ingredients:
- 2 lb. pork roast
- Salt and pepper
- Half of the diced sweet potatoes
- 1 lb. baby carrots
- 1 cup raspberry chipotle sauce
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.
