  • 1 - eggplant(s)
  • 3 - small zucchini
  • 1 - red bell pepper(s)
  • 1 - orange bell pepper(s)
  • 1 - 15 oz. can(s) crushed tomatoes
  • 1 - 6 oz. can(s) tomato paste
  • 2 - tsp minced garlic
  • 1 - tsp dried basil
  • - Salt and pepper
  • Garnish: - fresh basil leaves**

Cooking Directions for Single Meal

  1. Slice the eggplant and zucchini. Seed and slice the bell peppers.
  2. Place all of the sliced vegetables into the slow cooker. Add the crushed tomatoes, tomato paste, minced garlic, and dried basil. Gently combine. Set the slow cooker on low and let cook for 6 to 8 hours. Once cooked, spoon over pasta.
  3. Prepare the pasta before dinner.
  4. Prepare the salad.
  5. Serve Slow Cooker Ratatouille over pasta with side salad.

  1. Slice 2 eggplants and 8 zucchinis. Seed and slice the 2 red and 2 yellow bell peppers.
  2. Open 2 cans of crushed tomatoes. Open 2 cans of tomato paste.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the sliced eggplant and zucchini
  • Half of the sliced red and yellow bell peppers
  • 1 - 15 oz. can crushed tomatoes
  • 1 - 6 oz. can tomato paste
  • 2 tsp minced onion
  • 1 tsp dried basil

Remove as much air as you can and seal. Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 6 to 8 hours.
