Slow Cooker Spicy Southwest Chicken

Give your favorite shredded chicken a little southwestern kick with ancho chili powder and some crushed red pepper. You can always control the heat by adding more or less red pepper, or other hot sauce. Enjoy!
Ingredients for Single Meal
- 4 - small boneless chicken breasts
- 3 - Tbsp lime juice
- 2 - Tbsp soy sauce
- 2 - Tbsp olive oil
- 2 - Tbsp white vinegar
- 1 - tsp minced garlic
- 1 - Tbsp ancho chili powder
- 1 - Tbsp ground cumin
- 1 - tsp onion powder
- - Salt and pepper
- Garnish: - crushed red pepper**
- Side: - rice**
- Side: - veggies**
- 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal
- In a mixing bowl, whisk together the lime juice, soy sauce, olive oil, white vinegar, minced garlic, ancho chili powder, ground cumin, onion powder and a pinch of salt and pepper.
- Place the chicken breasts in the base of the slow cooker and pour the marinade mixture over the top.
- Set on low and cook for 8 hours. Once cooking is complete, shred the chicken into the sauce. Garnish with crushed red pepper, for added spice.
- Cook the rice as directed.
- Prepare veggies.

- In a mixing bowl, whisk together 6 Tbsp lime juice, 4 Tbsp soy sauce, 4 Tbsp olive oil, 4 Tbsp white vinegar, 2 tsp minced garlic, 2 Tbsp ancho chili powder, 2 Tbsp ground cumin, 2 tsp onion powder and a pinch of salt and pepper.
To each gallon-size plastic freezer baggie, add the following ingredients:
- 4 boneless chicken breasts
- Half of the prepared marinade
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.

Use chili powder if you don’t have ancho chili powder.
