Ingredients for Single Meal
- 4 - large boneless pork chops
- - Salt and pepper
- 1 - 15 oz. can(s) diced tomatoes
- 1 - 15 oz. can(s) black beans
- 2 - Tbsp minced onion
- 1 - Tbsp chili powder
- 1 - Tbsp ground cumin
- Side: - rice**
- Side: - salad**
- 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal
- Preheat oven to 350 and lightly spray a baking dish with non-stick cooking spray.
- Cook the rice, as directed
- Open and drain the black beans. Open and lightly drain the diced tomatoes.
- In a small mixing bowl, toss together the black beans, diced tomatoes, minced onion, chili powder, and ground cumin.
- Place the pork chops into the prepared baking dish. Season lightly with salt and pepper. Pour the black bean-tomato mixture over the top.
- Bake in the preheated oven for 25 to 40 minutes, depending on how thick the pork chops are. Cook until no longer pink in the middle. Let rest for 5 minutes before serving.
- Prepare the salad.
- Serve Southwestern Pork Chops with rice and salad.

- Open and drain 2 cans of black beans. Open and lightly drain 2 cans of the diced tomatoes.
- In a small mixing bowl, toss together the black beans, diced tomatoes, 4 Tbsp minced onion, 2 Tbsp chili powder, and 2 Tbsp ground cumin.
To each gallon-size plastic freezer baggie, add the following ingredients:
- 4 pork chops
- Salt and pepper
- Half of black bean-tomatoes mixture into each bag
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the oven and baking as directed.
Special notes
Serve with cauli-rice or other compliant side dish for complete Paleo/Whole30 meal.
