Southwestern Pork Chops

Fantastic topping to bake over pork chops. This is will soon be part of your regular rotation. (And yes, you could swap thin chicken breasts for the pork chops!) Enjoy!

Ingredients for Single Meal

  • 4 - large boneless pork chops
  • - Salt and pepper
  • 1 - 15 oz. can(s) diced tomatoes
  • 1 - 15 oz. can(s) black beans
  • 2 - Tbsp minced onion
  • 1 - Tbsp chili powder
  • 1 - Tbsp ground cumin
  • Side: - rice**
  • Side: - salad**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Preheat oven to 350 and lightly spray a baking dish with non-stick cooking spray.
  2. Cook the rice, as directed
  3. Open and drain the black beans. Open and lightly drain the diced tomatoes.
  4. In a small mixing bowl, toss together the black beans, diced tomatoes, minced onion, chili powder, and ground cumin.
  5. Place the pork chops into the prepared baking dish. Season lightly with salt and pepper. Pour the black bean-tomato mixture over the top.
  6. Bake in the preheated oven for 25 to 40 minutes, depending on how thick the pork chops are. Cook until no longer pink in the middle. Let rest for 5 minutes before serving.
  7. Prepare the salad.
  8. Serve Southwestern Pork Chops with rice and salad.

Freezeasy Meal Prep Directions

  1. Open and drain 2 cans of black beans. Open and lightly drain 2 cans of the diced tomatoes.
  2. In a small mixing bowl, toss together the black beans, diced tomatoes, 4 Tbsp minced onion, 2 Tbsp chili powder, and 2 Tbsp ground cumin.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 4 pork chops
  • Salt and pepper
  • Half of black bean-tomatoes mixture into each bag

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the oven and baking as directed.

Special notes

Serve with cauli-rice or other compliant side dish for complete Paleo/Whole30 meal.
