Not many recipes in MyFreezEasy involve this much “pre-cooking,” but when they do, they are worth it. This Spinach Lasagna Bake is so scrumptious and works well when prepped in batch with other MyFreezEasy recipes. The little pre-prep and cooking makes it worth it when all you have to do is take it out of the freezer to thaw and then bake it.

Ingredients for Single Meal

  • 12 - lasagna noodles
  • 1 - lb(s) ground beef
  • 1 - 24 oz jar(s) marinara sauce
  • 16 - oz. cottage cheese
  • 1 - 10 oz. frozen chopped spinach
  • 1 - egg(s)
  • 2 - Tbsp Italian seasoning
  • 1 - 8 oz can(s) tomato sauce
  • 2 - cup(s) shredded mozzarella cheese
  • 1/2 - cup(s) grated Parmesan cheese
  • Side: - salad**
  • 1 - 9x13 disposable foil tray(s)

Cooking Directions for Single Meal

  1. Preheat the oven to 350 F.
  2. Cook the lasagna, as directed, to al dente. Drain well.
  3. In a large skillet, brown the ground beef and drain if needed. Stir in the marinara sauce and let simmer for a few minutes.
  4. In a large mixing bowl, stir together the cottage cheese, frozen spinach, egg and Italian seasoning.
  5. In a disposable tray or 9x13-inch glass baking dish, add 1/3 of the lasagna noodles to the bottom of the dish. Add half of the meat sauce and spread into a thin layer, then add half of the cottage cheese mixture and spread into a thin layer. Sprinkle a thin layer of grated Parmesan over the top. Repeat the lasagna noodle, remaining meat sauce and remaining cottage cheese mixture. Add a third lasagna noodle layer and then spread the tomato sauce over the top of the lasagna noodles. Sprinkle the mozzarella cheese over the top.
  6. Bake in the preheated oven for 30 to 35 minutes, or until cheese begins to golden.
  7. Prepare the salad.
  8. Serve Spinach Lasagna Bake with side salad.

Freezeasy Meal Prep Directions

  1. In a large skillet, brown 2 lbs. ground beef and drain if needed. Stir in the 2 jars of marinara sauce and let simmer for a few minutes.
  2. Cook 24 lasagna noodles, as directed, to al dente. Drain well.
  3. In a large mixing bowl, stir together 2 containers cottage cheese, 2 bags frozen spinach, 2 eggs and 4 Tbsp Italian seasoning.
  4. Open 2 cans of tomato sauce.

To each disposable tray, add the following ingredients:

  • Layer of lasagna noodles
  • A quarter of the meat sauce
  • A quarter of the cottage cheese mixture
  • A sprinkle of Parmesan cheese
  • Layer of tomato sauce
  • Half the shredded mozzarella cheese

Cover with foil or lid, add label and freeze.

Freeze & Thaw Instructions

Put tray in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm shallow dish of water for about 20 minutes, before transferring to the oven and baking as directed.
