Ingredients for Single Meal
- 1 - Tbsp olive oil
- 2 - large boneless chicken breasts
- 1/2 - small white onion(s)
- 4 - cup(s) chicken or vegetable stock
- 2 - cup(s) frozen corn
- 1 - 15 oz. can(s) tomato sauce
- 1 - 15 oz. can(s) black beans
- 2 - tsp ground cumin
- 1 - tsp garlic powder
- - Salt and pepper
- 2 - cup(s) corn tortilla chips**
- 1 - cup(s) shredded cheese**
- Side: - veggies**

Cooking Directions for Single Meal
- Chop the onion. Cut the chicken into 1/2-inch pieces.
- To the Dutch oven or a large saucepan, heat the olive oil and saute the chopped onion and chicken for 3 to 4 minutes. Stir in the chicken stock, frozen corn, tomato sauce, black beans, ground cumin, garlic powder and salt and pepper. Bring to bubbling and cook for 10 to 15 minutes, or until chicken is cooked through.
- Ladle soup into bowls and add the crushed tortilla chips into each bowl and let them soak up some of the liquid. Top with shredded cheese, if preferred.
- Optional: If you wish to thicken the soup, add 1/2 to 1 tsp cornstarch or 2 Tbsp masa harina.

- Cut 4 boneless, skinless chicken breasts into bite size pieces.
- Chop 1 small white onion.
- Open 2 cans of tomato sauce.
- Open, drain and rinse 2 cans of black beans.
To each gallon-size plastic freezer baggie, add the following ingredients:
- Half of the chicken pieces
- Half of the chopped onion
- 2 cups frozen corn
- 15 oz. can tomato sauce
- 15 oz. can black beans, drained and rinsed
- 2 tsp ground cumin
- 1 tsp garlic powder
- Salt and pepper
- 4 cups chicken stock or equivalent bouillon base plus water
Note: you don\'t need to include the olive oil in the freezer bag, but should use it if cooking from
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring all of the ingredients in the freezer bag into large saucepan or Dutch oven. Bring to bubbling and cook for 20 minutes or until chicken is cooked through.

Omit the cheese garnish.
