  • 1 - 15 oz. can(s) black beans
  • 1 - 15 oz. can(s) refried beans
  • 1 - 7 oz can(s) green chiles
  • 2 - cup(s) red salsa
  • 1 - packet(s) taco seasoning
  • 8 - corn tortillas
  • 3 - cup(s) shredded Mexican blend cheese
  • Garnish: - sour cream**
  • Garnish: - sliced green onions**
  • Side: - salad**
  • 1 - 9x13 disposable foil tray(s)

Cooking Directions for Single Meal

  1. Preheat the oven to 400 F. Lightly grease the baking dish with non-stick cooking spray.
  2. Open the black beans and drain well.
  3. Open the refried beans and green chilies.
  4. In a large mixing bowl, toss together the black beans, refried beans, green chilies, red salsa and taco seasoning. Place half the mixture into the base of the baking dish. Add 4 corn tortillas in a layer. Sprinkle about 1 cup of shredded cheese. Place the remaining mixture onto shredded cheese, then the remaining corn tortillas. Add the rest of the shredded cheese on top.
  5. Bake in the preheated oven for 15 to 20 minutes, or until warmed through and the cheese is melted on top.
  6. Prepare the salad.
  7. Serve Bean Burrito Casserole garnished with sour cream and cilantro, and a side salad.

Freezeasy Meal Prep Directions

  1. In a large mixing bowl, toss together the black beans, refried beans, green chilies, 4 cups red salsa and 2 packets of taco seasoning.
  2. Open 2 cans of black beans and drain well.
  3. Open 2 cans of refried beans and 2 cans of green chilies.

To each disposable tray, layer the following ingredients:

  • 1/4 of the bean and salsa mixture
  • 4 corn tortillas
  • 1 cup shredded cheese
  • 1/4 of the bean and salsa mixture
  • 4 corn tortillas
  • 2 cups shredded cheese

Cover with foil or lid, add label and freeze.

Freeze & Thaw Instructions

Put tray in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm shallow dish of water for about 20 minutes, before transferring to the oven and baking as directed.
