- 1 - 15 oz. can(s) black beans
- 1 - 15 oz. can(s) refried beans
- 1 - 7 oz can(s) green chiles
- 2 - cup(s) red salsa
- 1 - packet(s) taco seasoning
- 8 - corn tortillas
- 3 - cup(s) shredded Mexican blend cheese
- Garnish: - sour cream**
- Garnish: - sliced green onions**
- Side: - salad**
- 1 - 9x13 disposable foil tray(s)

Cooking Directions for Single Meal
- Preheat the oven to 400 F. Lightly grease the baking dish with non-stick cooking spray.
- Open the black beans and drain well.
- Open the refried beans and green chilies.
- In a large mixing bowl, toss together the black beans, refried beans, green chilies, red salsa and taco seasoning. Place half the mixture into the base of the baking dish. Add 4 corn tortillas in a layer. Sprinkle about 1 cup of shredded cheese. Place the remaining mixture onto shredded cheese, then the remaining corn tortillas. Add the rest of the shredded cheese on top.
- Bake in the preheated oven for 15 to 20 minutes, or until warmed through and the cheese is melted on top.
- Prepare the salad.
- Serve Bean Burrito Casserole garnished with sour cream and cilantro, and a side salad.

- In a large mixing bowl, toss together the black beans, refried beans, green chilies, 4 cups red salsa and 2 packets of taco seasoning.
- Open 2 cans of black beans and drain well.
- Open 2 cans of refried beans and 2 cans of green chilies.
To each disposable tray, layer the following ingredients:
- 1/4 of the bean and salsa mixture
- 4 corn tortillas
- 1 cup shredded cheese
- 1/4 of the bean and salsa mixture
- 4 corn tortillas
- 2 cups shredded cheese
Cover with foil or lid, add label and freeze.
Freeze & Thaw Instructions
Put tray in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm shallow dish of water for about 20 minutes, before transferring to the oven and baking as directed.
