Easy prep for a delicious meal! This delicious soup is full of veggies! My kids love taco soup and I love how easy it is to make. All I have to do is add all the ingredients, except for the toppings, to the slow cooker before I leave. Then I come home to a delicious dinner. I like to make my Minestrone soup with butter as the fat base for sauteing the veggies. It some how adds just the teensiest hint of creaminess to the soup. You could certainly use olive oil, but try it with butter and see if you notice a difference! Delicious cajun flavors all together in a soup bowl! A delicious combination of veggies, beans, and ham! This is such a comforting soup! A “non-traditional” split pea soup - because this one doesn’t have ham and is vegetarian! We won’t freeze the dried split peas, but instead, will add them at the time of cooking. Having all the prep and chop work done in advance makes getting this onto the table a breeze. Enjoy!
