Pardon me while I help myself to this entire tray of enchiladas. I have a soft spot for bean and cheese tacos and enchiladas. I really wish there was a way for you to get a spatula, reach through the screen and get these babies onto your dinner plates!!! They are THAT good. A quick and easy way to a beautifully, delicious meal! Pesto is pretty much good on anything, but it really adds a nice touch to this dish. I love this meal – besides the fact that it’s ridiculously delicious, is a “5-ingredient meal” and is freezer friendly…it takes like 5 minutes to prepare. Actually, more like 3 minutes. Place ravioli in dish. Add water to dish. Pour sauce over the top. Sprinkle Parm. Sprinkle mozz. BAKE. This is a creamy, creamy and delicious version of mac n cheese with a little zip and zest mixed in! Balance the zip and zest with some black beans and corn and you’ve got the perfect one dish dinner! Need a new dinner addiction? Spinach artichoke dip, over ravioli with shredded cheese melted all over it. Pardon me while I drown myself in this meal. Hope you enjoy it as much as I did! (lol) This meal is much faster to put together than a lasagna because you’re putting the fresh or frozen ravioli into the baking dish without cooking it. You add a little water, plus the water from the marinara sauce, and the ravioli is cooked to perfection. You will ‘layer’ the sauce, raviolis, spinach and cheese…so it’s like a lasagna. But it doesn’t feel near as cumbersome in putting it together! ...because one cheese just isn't enough. Serious comfort food here!
